Cacao vs cocoa
Cacao bean comes from the cacao tree (Theobroma cacao). Cacao pods – large football-sized fruits – grow off the trunk and limbs of the cacao tree. The beans are inside the pods.
To make cocoa, cacao beans are harvested, fermented, dried, cleaned and roasted, after which they are often referred to as "cocoa". In the United States, cacao is often referred to simply as cocoa, which can be confusing.
Coconut sugar
• an alternative to brown sugar in any recipe, or to cane sugar in tea and coffee. • very good source of potassium, magnesium, zinc and iron and contains vitamins B1, B2, B3 and B6. • has twice the iron, four times the magnesium and more than 10 times the zinc compared to brown sugar.
• comes from smallholder farmers in Boyolali, the main island of Java, Indonesia.
• all money from harvesting and primary processing stays within the local community.
• farmers climb coconut palms and collect the sugar blossom nectar by gently slicing the flower. The nectar is then transferred into kettles. The evaporation process lowers the moisture content of the nectar before it is allowed to set into a solid nectar "brick". After the nectar has cooled and solidified it's then ground into granules.
