Terms
Cacao bean comes from the cacao tree (Theobroma cacao). Cacao pods – large football-sized fruits – grow off the trunk and limbs of the cacao tree. The beans are inside the pods.

To make cocoa, cacao beans are harvested, fermented, dried, cleaned and roasted, after which they are often referred to as "cocoa". In the United States, cacao is often referred to simply as cocoa, which can be confusing.

  • Wild Hibsicus Flowers in Syrup. When added to champagne, lemonade or soda, the flowers – which are edible and have a raspberry-rhubarb flavour – open up and make the liquid go pink. Put the flower and a bit of syrup in a glass first, then add the liquid.
